Cilantro Lime Rice

INGREDIENTS

  • 2 Tbs olive oil
  • 1 1/2 cups uncooked jasmine rice (or other long-grain rice)
  • 1 clove garlic, minced
  • 2 1/4 cups chicken broth
  • 1 tsp salt
  • Zest of 1 lime
  • Juice of 1 lime (about 3 Tbs)
  • 1/2 cup chopped cilantro

DIRECTIONS

  • In a medium saucepan over medium-high heat, toast the rice in olive oil, stirring occasionally, until it begins to brown and turn opaque. Add the garlic and cook for about 1 minute more.
  • Add the chicken broth, salt, and lime zest and bring to a boil. Cover and turn the heat to low. Let the rice simmer undisturbed for 15 minutes.
  • Remove from heat and let sit for 10 minutes before fluffing with a fork. Then transfer the rice to a serving bowl and toss with lime juice and cilantro.
  • Serve warm with carne adobada!
