Lobster Roll

INGREDIENTS
- 2 lbs cooked lobster meat, rinsed, drained, and torn into large chunks
- ¼ cup minced celery
- ¼ cup mayonnaise
- 1 Tbs minced chives
- 1 Tbs lemon juice
- 1 tsp lemon zest
- ¼ tsp kosher salt
- ½ tsp ground black pepper
- 4 split-top hot dog buns
- 4 Tbs butter, divided
- Fresh dill, chopped, for garnish
DIRECTIONS
- Mix together the celery, mayonnaise, chives, lemon juice, lemon zest, salt, and pepper in a large bowl.
- Melt 2 Tbs of butter in a large skillet over medium heat. Add the lobster meat and cook, stirring, until warm and buttery, about 2 minutes.
- Remove the lobster meat with a slotted spoon and add to the mayonnaise mixture. Toss to coat.
- Discard the butter and juice in the skillet and wipe clean. Then melt the remaining butter and toast the hot dog buns until golden.
- Load the hot dog buns with lobster meat and garnish with dill. Serve with lemon and potato chips.
