Lobster Roll

INGREDIENTS

  • 2 lbs cooked lobster meat, rinsed, drained, and torn into large chunks
  • ¼ cup minced celery
  • ¼ cup mayonnaise
  • 1 Tbs minced chives
  • 1 Tbs lemon juice
  • 1 tsp lemon zest
  • ¼ tsp kosher salt
  • ½ tsp ground black pepper
  • 4 split-top hot dog buns
  • 4 Tbs butter, divided
  • Fresh dill, chopped, for garnish

DIRECTIONS

  • Mix together the celery, mayonnaise, chives, lemon juice, lemon zest, salt, and pepper in a large bowl. 
  • Melt 2 Tbs of butter in a large skillet over medium heat. Add the lobster meat and cook, stirring, until warm and buttery, about 2 minutes.
  • Remove the lobster meat with a slotted spoon and add to the mayonnaise mixture. Toss to coat.
  • Discard the butter and juice in the skillet and wipe clean. Then melt the remaining butter and toast the hot dog buns until golden. 
  • Load the hot dog buns with lobster meat and garnish with dill. Serve with lemon and potato chips.
