Peach Lemonade

INGREDIENTS
- 3 cups fresh or frozen peaches, peeled and diced
- 3 Tbs lemon zest (about 3 lemons)
- 2 cups sugar
- 6 cups cold water
- 1 cup lemon juice
- Ice, mint leaves, and lemon slices for garnish
DIRECTIONS
- Combine the peaches, lemon zest, sugar, and 2 cups of water in a saucepan. Bring to a simmer over medium heat for about 10 minutes, until the peaches have softened.
- Use a potato masher or fork to mash the peaches, then continue to simmer until thickened slightly.
- Let the peach syrup cool to room temperature, then use a fine-mesh sieve to strain out any solid pieces.
- Combine the peach syrup, lemon juice, and remaining water in a serving pitcher and refrigerate until ready to serve.
- Serve over ice and garnish with mint leaves!
