Sweet Cheesy Biscuits

INGREDIENTS

  • 1 ½ cups flour
  • ⅔ cup sugar
  • ¾ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 4 Tbs butter, cubed
  • ¾ cup buttermilk
  • 1 egg, lightly beaten
  • ¼ tsp vanilla extract
  • 1 ¼ cups shredded sharp cheddar cheese

DIRECTIONS

  • Grease a mini muffin tin and preheat the oven to 400 degrees F.
  • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Cut the butter into the dry ingredients until it resembles coarse crumbs. 
  • In a separate bowl, whisk together the buttermilk, egg, vanilla.
  • Add the dry ingredients to the wet and mix until just combined, then fold in the shredded cheese.
  • Pour the batter into the mini muffin tins and bake until firm and browned on the edges, about 7 to 10 minutes.
  • Let the biscuits cool in the tin for 10 minutes before removing and serving warm with butter!
