Snickerdoodles

Yield: 2 dozen cookies
Total time: 1 hour
INGREDIENTS
- ½ cup butter, softened
- ½ cup sugar
- ⅓ cup brown sugar
- 1 egg
- ½ tsp vanilla
- 1 ½ cups flour
- ¼ tsp salt
- ½ tsp baking soda
- ¼ tsp cream of tartar
- 2 Tbs sugar + 1 tsp cinnamon for rolling
DIRECTIONS
- In a large bowl, cream together the butter and sugars. Add the egg and vanilla and beat until smooth.
- In another bowl, whisk together the flour, salt, baking soda, and cream of tartar.
- Add the dry ingredients to the wet ingredients and mix well.
- Refrigerate the dough for 30 minutes to 1 hour.
- Preheat the oven to 350 degrees F.
- Combine 2 Tbs sugar and 1 tsp cinnamon in a small bowl for rolling.
- Roll the dough into balls about the size of 1 heaping tablespoon. Roll each ball into the cinnamon-sugar mixture until evenly coated, then arrange 1 dozen on an ungreased baking sheet. (Do not flatten!)
- Bake for 8 to 10 minutes. Let them cool on the pan for a few minutes before transferring to a cooling rack. Repeat with remaining dough, then enjoy!
