Sweet Cheesy Biscuits

INGREDIENTS
- 1 ½ cups flour
- ⅔ cup sugar
- ¾ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 4 Tbs butter, cubed
- ¾ cup buttermilk
- 1 egg, lightly beaten
- ¼ tsp vanilla extract
- 1 ¼ cups shredded sharp cheddar cheese
DIRECTIONS
- Grease a mini muffin tin and preheat the oven to 400 degrees F.
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Cut the butter into the dry ingredients until it resembles coarse crumbs.
- In a separate bowl, whisk together the buttermilk, egg, vanilla.
- Add the dry ingredients to the wet and mix until just combined, then fold in the shredded cheese.
- Pour the batter into the mini muffin tins and bake until firm and browned on the edges, about 7 to 10 minutes.
- Let the biscuits cool in the tin for 10 minutes before removing and serving warm with butter!
