Sweet Potato Biscuits

INGREDIENTS
- 2 cups all-purpose flour
- 4 tsp baking powder
- ½ tsp kosher salt
- 6 Tbs cold butter, cubed
- 1 cup sweet potato, cooked and mashed
- ½ cup cold buttermilk
DIRECTIONS
- Preheat the oven to 375 degrees F.
- In a large bowl, whisk together the flour, baking powder, and salt.
- Add the butter and use a fork or pastry blender to cut it into the flour until the butter pieces are about pea-sized.
- Add in the sweet potato and buttermilk and stir to incorporate.
- Dust your work surface with flour and turn out the dough to knead by hand until everything is fully mixed in and the dough is slightly sticky.
- Shape the dough into a rectangle about 1” thick.
- Use a biscuit cutter or sharp, round cookie cutter to cut out rounds of dough. Combine any scraps to use all the dough you have.
- Line a baking sheet with parchment paper and arrange the biscuits on it.
- Cover with plastic wrap and refrigerate for about 30 minutes.
- Bake for about 15 to 20 minutes and allow to cool for about 5 minutes before serving.
- Serve warm with honey butter or ham!
