Coleslaw

INGREDIENTS
- 1 head of cabbage, shredded (or 16-oz bag store-bought)
- 1 large carrot, shredded
- 1 stalk celery, shredded
- ½ cup mayonnaise
- 2 Tbs dijon mustard
- 2 Tbs apple cider vinegar
- 1 ½ Tbs sugar
- 1 Tbs grated onion or 1 tsp onion powder
- Salt and pepper to taste
DIRECTIONS
- In a large bowl, toss the cabbage, carrot, and celery together.
- In a separate bowl, combine the remaining ingredients, then stir into the cabbage mixture to coat thoroughly.
- Refrigerate at least 2 hours and toss again before serving with fried catfish!
