INGREDIENTS

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 Tbs sugar
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp Cajun seasoning
  • ¼ tsp salt
  • ½ cup buttermilk, room temperature
  • 2 Tbs vegetable oil
  • 1 egg, room temperature
  • 3 Tbs yellow onion, minced
  • 2 green onions, minced
  • ½ cup frozen corn
  • Oil for frying

DIRECTIONS

  • In a medium bowl, whisk together the cornmeal, flour, sugar, baking soda, baking powder, Cajun seasoning, and salt. 
  • In a separate bowl, combine the buttermilk, vegetable oil, and egg. Stir in the onion, corn, and green onion.
  • Add the dry ingredients to the wet ingredients and mix until just combined. Let the batter rest while preparing the oil. 
  • In a heavy pot or deep fryer, heat the oil to 365 degrees F. 
  • Fry the hushpuppies by scooping a round spoonful of batter, then using a second spoon to gently push it off into the oil. Fry until golden brown, about 3 to 5 minutes.
  • Drain them on paper towels, then serve warm with comeback sauce.

NOTES

  • If you don’t have buttermilk, you can put ½ Tbs of white vinegar in ½ cup milk and let it sit for 5 minutes before adding it in with the other wet ingredients.
