Fried Tomatoes

INGREDIENTS
- 3 firm green or under-ripe red tomatoes
- Salt to taste
- 1 egg, lightly beaten
- 1/4 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup breadcrumbs
- Oil for shallow frying
DIRECTIONS
- Slice the tomatoes ¼” thick and sprinkle with salt. Let sit for 10 minutes, then pat dry.
- Heat the oil in a skillet on medium-high heat.
- Put the beaten egg in a shallow bowl, then in a separate shallow dish, combine the flour, cornmeal, and bread crumbs.
- Dip the tomato slices in the egg, then dredge on both sides with the flour mixture.
- Fry the tomatoes until golden brown, about 5 minutes per side. Drain on paper towels and serve warm!
