Fried Tomatoes

INGREDIENTS

  • 3 firm green or under-ripe red tomatoes
  • Salt to taste
  • 1 egg, lightly beaten
  • 1/4 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup breadcrumbs 
  • Oil for shallow frying

DIRECTIONS

  • Slice the tomatoes ¼” thick and sprinkle with salt. Let sit for 10 minutes, then pat dry.
  • Heat the oil in a skillet on medium-high heat. 
  • Put the beaten egg in a shallow bowl, then in a separate shallow dish, combine the flour, cornmeal, and bread crumbs. 
  • Dip the tomato slices in the egg, then dredge on both sides with the flour mixture.
  • Fry the tomatoes until golden brown, about 5 minutes per side. Drain on paper towels and serve warm!
