Benne Wafers

Total time: 25 minutes
INGREDIENTS
- 6 Tbs sesame seeds
- 1 cup brown sugar
- 6 Tbs butter
- 1 egg, beaten
- ½ cup flour
- ¼ tsp salt
- ¼ tsp baking powder
- 1 tsp vanilla
DIRECTIONS
- Preheat the oven to 375 degrees F.
- Toast the sesame seeds in a small skillet over medium heat, stirring occasionally, until browned.
- Remove from heat and let the seeds cool to room temperature.
- In a medium bowl, beat the brown sugar and butter together.
- Add the beaten egg and stir until well combined.
- In a separate bowl, sift together the flour, salt, and baking powder.
- Add the dry ingredients to the wet and stir until just smooth.
- Mix in the vanilla and the toasted seeds.
- Line a baking sheet with parchment paper.
- Drop the batter onto the parchment paper by teaspoons, leaving enough space for them to spread out while baking.
- Bake until browned, about 10 minutes. (Note: I used dark brown sugar in mine, so they’re darker in the photo than they’d be if using regular brown sugar.)
- Let the wafers cool on the pan for a minute, then remove to a wire rack to cool completely.
