INGREDIENTS

  • 1 sweet onion, finely diced
  • 1 smoked ham hock
  • 3 cloves garlic, finely chopped
  • 1 (32 oz) container chicken broth
  • 1 lb collard greens, trimmed
  • 2 Tbs apple cider vinegar
  • 1/2 Tbs white sugar
  • 3/4 tsp salt
  • 1/4 tsp ground black pepper
  • Red pepper flakes and lemon juice to taste

DIRECTIONS

  • In a stock pot, combine the onions, ham hocks, garlic, and chicken broth. 
  • Cook over medium heat for about 2 hours, until the meat is falling off the bones. 
  • Remove the cooked meat, shred, discard the bones, and set the meat aside
  • Add the collard greens, vinegar, sugar, salt, and black pepper to the broth and stir to combine.
  • Cook for about 2 more hours, until the greens are tender. 
  • Stir the meat back in, add red pepper flakes and a splash of lemon juice, and serve warm.
