Red Slaw

INGREDIENTS
- 1 small head of green cabbage, cored and shredded
- 2 large carrots, shredded
- ¼ cup diced red onion
- 1 cup sugar
- ⅓ cup kosher salt
- ⅔ cup apple cider vinegar
- ½ cup ketchup
- 2 tsp hot sauce
- 2 tsp pepper
DIRECTIONS
- Toss the cabbage and carrots together with ⅔ cup sugar and ⅓ cup salt in a large serving bowl. Let it sit for 5 minutes, then rinse in a colander with cold water. Spin dry or dab dry with paper towels. Transfer to a large bowl and toss with red onion.
- In a medium bowl, whisk together the remaining sugar, apple cider vinegar, ketchup, pepper, and hot sauce.
- Pour the dressing over the salad and stir to coat. Cover and refrigerate for 1 hour.
- Serve as a side dish or on North Carolina-style pulled pork sandwiches.
