Red Slaw

INGREDIENTS

  • 1 small head of green cabbage, cored and shredded
  • 2 large carrots, shredded
  • ¼ cup diced red onion
  • 1 cup sugar
  • ⅓ cup kosher salt
  • ⅔ cup apple cider vinegar
  • ½ cup ketchup
  • 2 tsp hot sauce
  • 2 tsp pepper

DIRECTIONS

  • Toss the cabbage and carrots together with ⅔ cup sugar and ⅓ cup salt in a large serving bowl. Let it sit for 5 minutes, then rinse in a colander with cold water. Spin dry or dab dry with paper towels. Transfer to a large bowl and toss with red onion. 
  • In a medium bowl, whisk together the remaining sugar, apple cider vinegar, ketchup, pepper, and hot sauce. 
  • Pour the dressing over the salad and stir to coat. Cover and refrigerate for 1 hour. 
  • Serve as a side dish or on North Carolina-style pulled pork sandwiches.
