Sweet Potato Pie

INGREDIENTS
- ⅓ cup butter, softened
- 1 cup sugar
- 3 eggs, lightly beaten
- ¾ cup evaporated milk
- 2 sweet potatoes, peeled, boiled or baked until soft, and mashed well
- 1 ½ tsp vanilla
- 1 tsp cinnamon
- 1 tsp nutmeg
- ½ tsp ginger
- ¼ tsp salt
- Unbaked pie crust
DIRECTIONS
- Preheat the oven to 425 degrees F.
- In a stand mixer, beat the butter and sugar together.
- Add the eggs and mix until well combined.
- Add the milk, sweet potatoes, vanilla, cinnamon, nutmeg, ginger, and salt.
- Pour the mixture into the pie shell.
- Bake for 15 minutes, then reduce the heat to 350 degrees F and bake for an additional 40 minutes or until done.
- Let the pie cool before serving.
