Homemade Tomato Juice

Total time: 1.5 hours
Yield: 1 quart
INGREDIENTS
- 5 lbs ripe tomatoes, washed, cored, and chopped
- ¼ cup water
- ¼ tsp onion salt
- Dash of celery salt
- Celery stalks for garnish
DIRECTIONS
- Bring the tomatoes and water to a rolling boil in a large stock pot.
- Once boiling, remove from heat and press the boiled tomatoes through a sieve into a large bowl to remove seeds and skins.
- Return the tomato juice to the stock pot (discard the seeds and skins), add onion salt and celery salt.
- Bring to a rolling boil again, then remove from heat and refrigerate, or use as a soup base!
- If drinking, serve cold garnished with celery.
