Homemade Tomato Juice

Yield: 1 quart

INGREDIENTS

  • 5 lbs ripe tomatoes, washed, cored, and chopped
  • ¼ cup water
  • ¼ tsp onion salt
  • Dash of celery salt 
  • Celery stalks for garnish

DIRECTIONS

  • Bring the tomatoes and water to a rolling boil in a large stock pot. 
  • Once boiling, remove from heat and press the boiled tomatoes through a sieve into a large bowl to remove seeds and skins. 
  • Return the tomato juice to the stock pot (discard the seeds and skins), add onion salt and celery salt.
  • Bring to a rolling boil again, then remove from heat and refrigerate, or use as a soup base!
  • If drinking, serve cold garnished with celery.
