Buckeyes

Yield: 3 dozen buckeyes

INGREDIENTS

  • 2 cups creamy peanut butter
  • ½ cup butter, softened
  • 2 Tbs light brown sugar
  • ¼ tsp salt
  • 1 ¼ tsp vanilla
  • 3 ¼ cups powdered sugar
  • 2 cups semisweet chocolate chips
  • 1 tsp vegetable shortening or coconut oil

DIRECTIONS

  • In the bowl of a stand mixer, beat the peanut butter and butter until well-combined.
  • Stir in the brown sugar, vanilla, and salt. Gradually add the powdered sugar until completely incorporated. 
  • Use a tablespoon to scoop balls of dough and roll them between the palms of your hands until smooth and round.
  • Line a baking sheet with wax paper. Place the dough balls on the baking sheet and freeze for 15 minutes.
  • Meanwhile, combine chocolate chips and shortening and microwave for 25 seconds. Stir well and microwave for another 25 seconds, repeating as needed until the chocolate is completely melted and smooth.
  • Pour the melted chocolate into a deep dish or a wide cup. Spear the top of each dough ball with a toothpick and use the toothpick to dip each dough ball into the melted chocolate, leaving the top bare.
  • Return the dipped buckeyes to the baking sheet and remove the toothpicks. Gently smooth out the toothpick holes.
  • Refrigerate until the chocolate is hardened, then enjoy!
