Sugar Cream Pie

INGREDIENTS
- 1 9-inch pie crust, baked
- 4 Tbs butter
- 4 Tbs cornstarch
- ⅔ cup white sugar
- 2 ¼ cups heavy cream
- 1 tsp vanilla
- 2 Tbs butter, melted
- ¼ tsp ground cinnamon
- ¼ tsp nutmeg
DIRECTIONS
- In a small saucepan, melt the 4 Tbs butter over low heat.
- Whisk in the cornstarch, sugar, and cream. Increase heat to medium-high and cook, whisking constantly, until the mixture boils and becomes very thick, about 15 minutes. It should be thicker than pudding. Be patient!
- Remove from heat and stir in the vanilla and a pinch of salt.
- Preheat oven to broil on high.
- Pour the sugar cream mixture into the pre-baked pie crust. Drizzle with 2 Tbs melted butter and sprinkle with cinnamon and nutmeg.
- Broil for about 30-60 seconds, just until the butter bubbles (watch it closely to make sure it doesn’t burn).
- Refrigerate for at least one hour until set, then serve cold!
