Sugar Cream Pie

INGREDIENTS

  • 1 9-inch pie crust, baked
  • 4 Tbs butter
  • 4 Tbs cornstarch
  • ⅔ cup white sugar
  • 2 ¼ cups heavy cream
  • 1 tsp vanilla
  • 2 Tbs butter, melted
  • ¼ tsp ground cinnamon
  • ¼ tsp nutmeg

DIRECTIONS

  • In a small saucepan, melt the 4 Tbs butter over low heat. 
  • Whisk in the cornstarch, sugar, and cream. Increase heat to medium-high and cook, whisking constantly, until the mixture boils and becomes very thick, about 15 minutes. It should be thicker than pudding. Be patient! 
  • Remove from heat and stir in the vanilla and a pinch of salt.
  • Preheat oven to broil on high.
  • Pour the sugar cream mixture into the pre-baked pie crust. Drizzle with 2 Tbs melted butter and sprinkle with cinnamon and nutmeg.
  • Broil for about 30-60 seconds, just until the butter bubbles (watch it closely to make sure it doesn’t burn). 
  • Refrigerate for at least one hour until set, then serve cold!
