Hot Brown Sandwich

INGREDIENTS
For the Sauce:
- 2 Tbs butter
- 2 Tbs flour
- 2 ½ cups whole milk
- 2 cups shredded white cheddar cheese
- ¼ cup grated parmesan
- Pinch of ground nutmeg
- Salt and pepper to taste
The Rest:
- 8 thick slices day-old white bread (brioche or Texas toast recommended), toasted
- 2 lbs ¼”-thick roasted turkey breast slices
- 3 ripe beefsteak tomatoes
- 1 ½ cups shredded white cheddar cheese
- ½ cup grated parmesan cheese
- 16 slices thick bacon, fully cooked
- Fresh chives for garnish
- Fresh flat-leaf parsley for garnish
DIRECTIONS
- To make the sauce: In a medium saucepan over medium heat, melt 2 Tbs butter, then whisk in flour for 1 minute to form a roux. Add the 2 ½ cups whole milk and bring to a boil, whisking constantly, until thickened, about 5 minutes. Add the 2 cups white cheddar and ¼ cup parmesan and continue to cook until melted. Season with nutmeg, salt, and pepper to taste. Set aside.
- Preheat the broiler.
- Arrange the toasted bread on a baking sheet. Top each piece of bread with 2 slices of turkey and 2 slices of beefsteak tomato. Divide the sauce between each piece, then top with the cheeses.
- Broil until the tops are golden brown and bubbly, about 5 minutes. Remove from the oven and top each with 2 slices of bacon in a cross shape, then sprinkle with chives and parsley for garnish.
