Servings: 4

Total time: 20 minutes

INGREDIENTS

For the Sauce:

  • 2 Tbs butter
  • 2 Tbs flour
  • 2 ½ cups whole milk
  • 2 cups shredded white cheddar cheese
  • ¼ cup grated parmesan
  • Pinch of ground nutmeg
  • Salt and pepper to taste

The Rest:

  • 8 thick slices day-old white bread (brioche or Texas toast recommended), toasted
  • 2 lbs ¼”-thick roasted turkey breast slices
  • 3 ripe beefsteak tomatoes
  • 1 ½ cups shredded white cheddar cheese
  • ½ cup grated parmesan cheese
  • 16 slices thick bacon, fully cooked
  • Fresh chives for garnish
  • Fresh flat-leaf parsley for garnish

DIRECTIONS

  • To make the sauce: In a medium saucepan over medium heat, melt 2 Tbs butter, then whisk in flour for 1 minute to form a roux. Add the 2 ½ cups whole milk and bring to a boil, whisking constantly, until thickened, about 5 minutes. Add the 2 cups white cheddar and ¼ cup parmesan and continue to cook until melted. Season with nutmeg, salt, and pepper to taste. Set aside.
  • Preheat the broiler.
  • Arrange the toasted bread on a baking sheet. Top each piece of bread with 2 slices of turkey and 2 slices of beefsteak tomato. Divide the sauce between each piece, then top with the cheeses.
  • Broil until the tops are golden brown and bubbly, about 5 minutes. Remove from the oven and top each with 2 slices of bacon in a cross shape, then sprinkle with chives and parsley for garnish.
