Corn Pudding

INGREDIENTS

  • ⅔ cup flour
  • ½ cup yellow cornmeal
  • 3 Tbs sugar
  • 1 Tbs baking powder
  • ¼ tsp salt
  • 1 (15-oz) can creamed corn
  • 1 (15-oz) can whole kernel corn, drained
  • 3 eggs
  • 1 cup sour cream
  • ½ cup butter, melted

DIRECTIONS

  • Preheat the oven to 375 degrees F, and grease a 2-quart casserole dish.
  • In a large bowl, add all the ingredients and mix until well combined. Pour into the casserole dish.
  • Bake until golden brown and set in the middle, about 45 to 50 minutes.

NOTE

  • To make this recipe even easier, you can use a 8.5-oz packet of Jiffy corn muffin mix instead of the first four ingredients listed.
