Buckeyes

Yield: 3 dozen buckeyes
INGREDIENTS
- 2 cups creamy peanut butter
- ½ cup butter, softened
- 2 Tbs light brown sugar
- ¼ tsp salt
- 1 ¼ tsp vanilla
- 3 ¼ cups powdered sugar
- 2 cups semisweet chocolate chips
- 1 tsp vegetable shortening or coconut oil
DIRECTIONS
- In the bowl of a stand mixer, beat the peanut butter and butter until well-combined.
- Stir in the brown sugar, vanilla, and salt. Gradually add the powdered sugar until completely incorporated.
- Use a tablespoon to scoop balls of dough and roll them between the palms of your hands until smooth and round.
- Line a baking sheet with wax paper. Place the dough balls on the baking sheet and freeze for 15 minutes.
- Meanwhile, combine chocolate chips and shortening and microwave for 25 seconds. Stir well and microwave for another 25 seconds, repeating as needed until the chocolate is completely melted and smooth.
- Pour the melted chocolate into a deep dish or a wide cup. Spear the top of each dough ball with a toothpick and use the toothpick to dip each dough ball into the melted chocolate, leaving the top bare.
- Return the dipped buckeyes to the baking sheet and remove the toothpicks. Gently smooth out the toothpick holes.
- Refrigerate until the chocolate is hardened, then enjoy!
