HUSHPUPPIES

INGREDIENTS
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 Tbs sugar
- ½ tsp baking soda
- ½ tsp baking powder
- ¼ tsp Cajun seasoning
- ¼ tsp salt
- ½ cup buttermilk, room temperature
- 2 Tbs vegetable oil
- 1 egg, room temperature
- 3 Tbs yellow onion, minced
- 2 green onions, minced
- ½ cup frozen corn
- Oil for frying
DIRECTIONS
- In a medium bowl, whisk together the cornmeal, flour, sugar, baking soda, baking powder, Cajun seasoning, and salt.
- In a separate bowl, combine the buttermilk, vegetable oil, and egg. Stir in the onion, corn, and green onion.
- Add the dry ingredients to the wet ingredients and mix until just combined. Let the batter rest while preparing the oil.
- In a heavy pot or deep fryer, heat the oil to 365 degrees F.
- Fry the hushpuppies by scooping a round spoonful of batter, then using a second spoon to gently push it off into the oil. Fry until golden brown, about 3 to 5 minutes.
- Drain them on paper towels, then serve warm with comeback sauce.
NOTES
- If you don’t have buttermilk, you can put ½ Tbs of white vinegar in ½ cup milk and let it sit for 5 minutes before adding it in with the other wet ingredients.
