Peach Cobbler

INGREDIENTS
- 8 fresh peaches, peeled, pitted, and sliced
- ½ cup white sugar, divided
- ½ cup brown sugar, divided
- ¼ tsp cinnamon
- ⅛ tsp nutmeg
- 1 tsp lemon juice
- 2 tsp cornstarch
- 1 cup all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 6 Tbs butter, cold and cut into pieces
- ¼ cup boiling water
- 3 Tbs white sugar + 1 tsp cinnamon combined
DIRECTIONS
- Preheat the oven to 425 degrees F.
- In a large bowl, toss the peach slices with ¼ cup white sugar, ¼ cup brown sugar, ¼ tsp cinnamon, nutmeg, lemon juice, and cornstarch.
- Pour the slices into an 8×8 baking dish and bake for 10 minutes.
- In another large bowl, mix together the flour, ¼ cup white sugar, ¼ cup brown sugar, baking powder, and salt.
- Use a pastry blender or your fingers to mix in the butter, until the mixture becomes crumbly.
- Add the water and stir until just combined.
- When the peaches are done baking, spoon the dough over them in dollops until mostly covered.
- Sprinkle the cinnamon-sugar mixture over top.
- Bake for about 30 minutes, until the top is golden brown.
- Serve warm with vanilla ice cream!
