INGREDIENTS

  • 8 fresh peaches, peeled, pitted, and sliced 
  • ½ cup white sugar, divided
  • ½ cup brown sugar, divided
  • ¼ tsp cinnamon
  • ⅛ tsp nutmeg
  • 1 tsp lemon juice
  • 2 tsp cornstarch
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 6 Tbs butter, cold and cut into pieces
  • ¼ cup boiling water
  • 3 Tbs white sugar + 1 tsp cinnamon combined

DIRECTIONS

  • Preheat the oven to 425 degrees F. 
  • In a large bowl, toss the peach slices with ¼ cup white sugar, ¼ cup brown sugar, ¼ tsp cinnamon, nutmeg, lemon juice, and cornstarch. 
  • Pour the slices into an 8×8 baking dish and bake for 10 minutes.
  • In another large bowl, mix together the flour, ¼ cup white sugar, ¼ cup brown sugar, baking powder, and salt. 
  • Use a pastry blender or your fingers to mix in the butter, until the mixture becomes crumbly. 
  • Add the water and stir until just combined.
  • When the peaches are done baking, spoon the dough over them in dollops until mostly covered.
  • Sprinkle the cinnamon-sugar mixture over top. 
  • Bake for about 30 minutes, until the top is golden brown. 
  • Serve warm with vanilla ice cream!
