Shrimp and Grits

INGREDIENTS

  • 4 cups water
  • Salt and pepper to taste
  • 1 cup stone-ground grits
  • 3 Tbs butter
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup smoked gouda, shredded
  • 1 lb fresh shrimp, peeled and deveined
  • 6 slices bacon, uncooked, chopped
  • 1 cup scallions, thinly sliced
  • 2 Tbs parsley, chopped
  • 4 tsp lemon juice
  • 1 clove garlic, minced

DIRECTIONS

  • In a large saucepan, bring the water to a boil. 
  • Add the grits, salt, and pepper, reduce heat, and cook for about 15 to 20 minutes, until the water is absorbed.
  • Remove from heat and stir in the butter and cheese until melted and incorporated.
  • Rinse the shrimp and pat it dry. 
  • In a large skillet, cook the bacon over medium-high heat until browned. 
  • Remove the bacon and add in the shrimp, cooking it in the bacon grease until it turns pink.
  • Add the lemon juice, bacon, parsley, scallions, and garlic, and saute for 3 minutes.
  • Spoon the grits into serving bowls and top with shrimp.
  • Serve warm.
