Peach Soda

INGREDIENTS
- 4 large peaches, peeled, pitted, and diced
- 1 Tbs lemon juice
- Pinch of salt
- 1 cup water
- ½ cup sugar
- 1 liter sparkling water
DIRECTIONS
- In a mixing bowl, toss the peaches with the lemon juice and salt.
- In a small saucepan, bring the water to a boil. Remove from heat and add the sugar, stirring until the sugar dissolves.
- Pour the sugar water over the peaches and let it sit for 10 minutes.
- Use an immersion blender to puree the peaches, or blend them in batches in a standard blender. Strain the puree through a fine-mesh strainer.
- Use a funnel to pour the peach juice into a liter bottle. Top with sparkling water until the bottle is full. Refrigerate until ready to serve.
