Peach Soda

INGREDIENTS

  • 4 large peaches, peeled, pitted, and diced
  • 1 Tbs lemon juice
  • Pinch of salt
  • 1 cup water
  • ½ cup sugar
  • 1 liter sparkling water

DIRECTIONS

  • In a mixing bowl, toss the peaches with the lemon juice and salt.
  • In a small saucepan, bring the water to a boil. Remove from heat and add the sugar, stirring until the sugar dissolves. 
  • Pour the sugar water over the peaches and let it sit for 10 minutes.
  • Use an immersion blender to puree the peaches, or blend them in batches in a standard blender. Strain the puree through a fine-mesh strainer. 
  • Use a funnel to pour the peach juice into a liter bottle. Top with sparkling water until the bottle is full. Refrigerate until ready to serve.
