Stuffed Pork Chops

INGREDIENTS

  • 4 bone-in pork loin chops (at least 1” thick and 8 oz)
  • 1 Tbs canola oil
  • 1 Tbs finely chopped onion
  • 1 Tbs milk
  • 1 Tbs minced parsley
  • ¼ tsp sage
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 cup chopped, peeled apple
  • 1 cup whole kernel corn
  • 1 cup dry bread crumbs
  • ⅓ cup honey
  • 3 Tbs Dijon mustard
  • ¼ tsp rosemary

DIRECTIONS

  • Preheat oven to 350 degrees F. and grease a 9×13 baking dish.
  • Slice each pork chop horizontally almost to the bone to create a pocket in the middle.
  • In a large skillet, heat oil over medium heat. Brown the chops, then remove from heat to cool slightly while preparing the stuffing.
  • In a large bowl, combine the onion, milk, parsley, sage, salt, and pepper. Add the apple, corn, and bread crumbs, tossing to combine. 
  • Spoon the filling into the pork chops and place in the baking dish.
  • In a small bowl, combine the honey, mustard, and rosemary. Pour half over the pork chops and reserve the rest.
  • Bake, uncovered, for 30 minutes. Brush the remaining sauce over the pork chops, then continue to bake until a thermometer reads 165 degrees F., about 20-30 minutes longer.
  • Serve immediately with mashed potatoes!
