Wild Rice Salad

INGREDIENTS

  • 1 cup cooked wild rice blend (or wild rice on its own, if you can find it!)
  • ½ tsp sea salt
  • ¼ cup orange juice
  • ½ tsp orange zest
  • 2 Tbs olive oil
  • 3 Tbs apple cider vinegar
  • 2 Tbs honey
  • 1 tsp Dijon mustard
  • ¼ tsp ground black pepper
  • 1 cup toasted pecans, chopped
  • ½ cup dried cranberries
  • ½ cup chopped Italian parsley
  • 2 celery ribs, diced
  • 1 honeycrisp apple, diced
  • 2 green onions, thinly sliced

DIRECTIONS

  • In a large serving bowl, combine the orange juice, orange zest, olive oil, vinegar, honey, mustard, pepper, and remaining salt. 
  • Add the rice, pecans, cranberries, parsley, celery, apple, and green onions. Toss to combine and coat with the dressing. 
  • Serve at room temperature.
