Fried Apple Pies

INGREDIENTS

  • 1 cups all-purpose flour
  • ¼ cup butter, chilled
  • ½ tsp salt
  • ¼ cup ice water
  • 1 ½ cups dried apples
  • 1/4 cup sugar
  • ¼ tsp cinnamon
  • Oil for frying

DIRECTIONS

  • Sift the flour and salt together in a mixing bowl. 
  • Cut in the butter with a pastry blender until the mixture resembles coarse crumbs. 
  • Add cold water, 1 Tbs at a time, and mix with a fork, until the mixture is moistened and no longer falls apart. Be careful not to overwork it!
  • Gather the dough into a ball, wrap it in plastic, and refrigerate for 30 minutes. 
  • Chop the dried apples and put them in a saucepan with enough water to cover them, plus 1/4 cup sugar.
  • Bring the water to a boil, then reduce to the simmer until the apples are softened, about 15 minutes. Stir in the cinnamon, and allow them to cool to room temperature.
  • On a lightly floured work surface, roll the dough out to ⅛” thickness. 
  • Use a 4”-diameter cookie cutter to cut out rounds.
  • Divide the cooked apples between the pie crusts. Wet the edges with cold water, fold the dough in half, and crimp the edges with a fork or your fingers. Repeat with all the pastries.
  • In a large saucepan, heat the oil to 375 degrees F. 
  • Fry the pies, a few at a time, 2 to 3 minutes per side, until the crust is golden brown. 
  • Drain on paper towels, and dust with more cinnamon and sugar to taste. 

NOTES

  • You can also bake these by greasing a baking sheet, brushing melted butter on both sides of the pies, and baking at 375 degrees for 10 minutes, flipping them halfway.
