Key Lime Pie

INGREDIENTS

  • 1 ½ cups graham cracker crumbs (about 10 crackers)
  • ½ cup butter, melted
  • 3 cups (24 oz) sweetened condensed milk
  • ½ cup sour cream
  • ¾ cup lime juice (about 15 limes)
  • 1 Tbs lime zest 
  • 1 cup heavy cream
  • 1 tsp vanilla
  • 1 Tbs powdered sugar
  • Lime slices for garnish

DIRECTIONS

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, mix together the graham cracker crumbs and melted butter. 
  • Press the crumb mixture into the bottom and sides of a 9-inch pie pan.
  • Bake for 8 minutes.
  • In another medium bowl, mix together the sweetened condensed milk, sour cream, and lime juice.
  • Pour the mixture into the graham cracker crust.
  • Bake for 5 to 8 minutes, until tiny bubbles burst on the surface. It shouldn’t be browned!
  • Refrigerate for at least 2 hours.
  • In the meantime, use electric beaters to whip the heavy cream until stiff peaks start to form.
  • Add in the vanilla and powdered sugar, and beat until peaks form, but not much longer.
  • Garnish the pie with the whipped cream and lime slices, and serve cold!

NOTES

  • Make this recipe even easier by using a premade graham cracker crust and whipped cream!
