Collard Greens

INGREDIENTS
- 1 sweet onion, finely diced
- 1 smoked ham hock
- 3 cloves garlic, finely chopped
- 1 (32 oz) container chicken broth
- 1 lb collard greens, trimmed
- 2 Tbs apple cider vinegar
- 1/2 Tbs white sugar
- 3/4 tsp salt
- 1/4 tsp ground black pepper
- Red pepper flakes and lemon juice to taste
DIRECTIONS
- In a stock pot, combine the onions, ham hocks, garlic, and chicken broth.
- Cook over medium heat for about 2 hours, until the meat is falling off the bones.
- Remove the cooked meat, shred, discard the bones, and set the meat aside
- Add the collard greens, vinegar, sugar, salt, and black pepper to the broth and stir to combine.
- Cook for about 2 more hours, until the greens are tender.
- Stir the meat back in, add red pepper flakes and a splash of lemon juice, and serve warm.
