Blueberry Lemonade

INGREDIENTS

  • 2 cups fresh blueberries
  • ¾ cup sugar
  • ⅔ cup lemon juice
  • Peel from 1 lemon
  • 4 cups cold water
  • Ice, blueberries, and lemon slices for garnish

DIRECTIONS

  • In a small saucepan, combine sugar, lemon peel, and 1 cup water. Bring to a boil until syrup is yellow, then remove from heat, discard the peel, and let cool.
  • In a blender, puree the blueberries and 1 cup water. Strain through a fine-mesh sieve, if desired.
  • In a pitcher, combine the puree with lemon juice, syrup, and remaining water. Taste and add more sugar or water, if desired. Refrigerate until ready to serve.
  • Divide between glasses and garnish with blueberries and lemon slices.
