Fried Onions

INGREDIENTS

  • 1 large Spanish onion
  • 1 cup milk
  • ½ cup water
  • 1 cup flour
  • ¾ tsp salt
  • ½ tsp paprika
  • Oil for frying

DIRECTIONS

  • Peel and slice the onion into ¼” -thick rings and separate completely. Put them in a bowl and top with milk and water. Cover and let sit at room temperature for about 30 minutes.
  • Meanwhile, heat oil in a heavy-bottomed pot or Dutch oven over medium heat until it reaches 360 degrees F.
  • Line a baking sheet with paper towels and set aside. 
  • In a ziploc bag, combine the flour, salt, and paprika.
  • Use a fork to lift the onion rings in batches out of the milk mixture (letting the excess drip) and put into the bag of flour. Close the bag and shake to coat the rings. 
  • Fry the battered onion rings in batches for about 3 minutes, until they’re golden brown. Transfer to the paper-towel-lined baking sheet and add salt to taste.
  • Serve hot!
