Shrimp and Grits

INGREDIENTS
- 4 cups water
- Salt and pepper to taste
- 1 cup stone-ground grits
- 3 Tbs butter
- 1 cup sharp cheddar cheese, shredded
- 1 cup smoked gouda, shredded
- 1 lb fresh shrimp, peeled and deveined
- 6 slices bacon, uncooked, chopped
- 1 cup scallions, thinly sliced
- 2 Tbs parsley, chopped
- 4 tsp lemon juice
- 1 clove garlic, minced
DIRECTIONS
- In a large saucepan, bring the water to a boil.
- Add the grits, salt, and pepper, reduce heat, and cook for about 15 to 20 minutes, until the water is absorbed.
- Remove from heat and stir in the butter and cheese until melted and incorporated.
- Rinse the shrimp and pat it dry.
- In a large skillet, cook the bacon over medium-high heat until browned.
- Remove the bacon and add in the shrimp, cooking it in the bacon grease until it turns pink.
- Add the lemon juice, bacon, parsley, scallions, and garlic, and saute for 3 minutes.
- Spoon the grits into serving bowls and top with shrimp.
- Serve warm.
