Snickerdoodles

Yield: 2 dozen cookies

Total time: 1 hour

INGREDIENTS

  • ½ cup butter, softened
  • ½ cup sugar
  • ⅓ cup brown sugar
  • 1 egg
  • ½ tsp vanilla
  • 1 ½ cups flour
  • ¼ tsp salt
  • ½ tsp baking soda
  • ¼ tsp cream of tartar
  • 2 Tbs sugar + 1 tsp cinnamon for rolling

DIRECTIONS

  • In a large bowl, cream together the butter and sugars. Add the egg and vanilla and beat until smooth.
  • In another bowl, whisk together the flour, salt, baking soda, and cream of tartar.
  • Add the dry ingredients to the wet ingredients and mix well. 
  • Refrigerate the dough for 30 minutes to 1 hour.
  • Preheat the oven to 350 degrees F. 
  • Combine 2 Tbs sugar and 1 tsp cinnamon in a small bowl for rolling.
  • Roll the dough into balls about the size of 1 heaping tablespoon. Roll each ball into the cinnamon-sugar mixture until evenly coated, then arrange 1 dozen on an ungreased baking sheet. (Do not flatten!)
  • Bake for 8 to 10 minutes. Let them cool on the pan for a few minutes before transferring to a cooling rack. Repeat with remaining dough, then enjoy!
